Permission: Is it possible to choose an asset from a list, which the user is not allowed to see?

Yes, in the configuration of the relation fields you can use a Searching User which will be used to run the JQL search. When the Searching User has the permission to view the issues from the JQL result, the users can select them in the relation field even if the users themselves would not be allowed to view the issues.

In an earlier version you provide an Assets Picker custom field. Where is it now?

Since Version 4.1.0 we have no special custom field type "Assets Picker", but you can use a relation with only one custom field to provide the functionality of the Assets Picker field.

Is it possible to synchronize versions of one source project with two target projects?

No, you can choose a source project only once in the select list.

Are Lookup fields supported in the Filter Result dashboard gadget?

Yes, since version 5.0.24 (server) and 4.4.30 (Cloud) STAGIL Lookup custom fields are supported in the Jira Filter Results gadget.
